Cranberry mini Cheesecakes Recipe

Good Afternoon everyone; hope everyone is having fun on this weekend. Again I am posting after a week because of tight schedules I am going through. I am really thankful to my loveliest and sweet friend "Shazzy Karim" for sending me a beautiful Guest Post. She blogs at SeasonedwithShazzy. We met on Facebook almost few months back as i have already mentioned in my previous post. Found her a great lady, really love her recipes. Not only this she is mashAllah running her own bakery, expert in baking i must highlight. I am in love with her recipes collection. Last month, I did a guest post for her Coconut Cake enriched with nuts. In return today; she has sent me a super looking "Mini cranberry Cheese Cakes". Lets move on to Shazzy; she wants to say something; 

"My guest post for our friend Monu, she is running amazing life! Working, study, blogging and home J well that isn't an easy tasks! But oh well she seems to get all in right trackJ. I met Monu from talks beyond cooking; she is indeed a nice person, share lots of scrumptious recipes from time to time. 
Now you see now you don't, that's my blog for now. I’ve been unwell, busy, fixing new kitchen cabinet; I'm not able to cook for now. Hope that my cabinet will be done sooner. Oh and the weather in Malaysia is super-hot hardly rain. I somehow miss the smell of the rain. Anyway a day before them hacking my kitchen, I decide to make this beautiful indeed delicious dessert for my dear husband. He missed my baking so much, I've been sick for couple of weeks, needed the rest badly. If not won't be able to attend to my little precious Abraham.

This what I've been doing last week, hunt books for my shelves and my next food porn projects;

This is ginger snap cookies; I blend until it turns into crumbs. I love the gingery flavour yum my favourite.

Add in butter to get the sticky touch, so it’s much easier for you.

While you adding the crumb in the cups, add these beautiful cranberries in the pan Let it boil, thicker and softer.

Fresh cream cheese; beat until all soft and easy for you to add on top of your crumbs.

Once you add the crumbs below, you layer with the c. cheese and topped with this sweet soft cranberries.  Put in the freezer for 1 (one) hour until all stay firm together.

This is how it turn out; isn't it a beauty! And delicious yay!

Recipe: Mini Cranberry Cheesecake
1 package Ginger snap
1/4 cup unsalted butter, melted
1 8-oz package cream cheese
1/2 cup sugar
1 egg
1/2 tbsp. lemon juice
1/4 tsp. vanilla extract
1 cup fresh cranberries
2 tbsp. water
1 tbsp. sugar

Steps to follow
Preheat oven to 375F.
Line 8 muffin tin spaces with liners and set aside
With a rolling pin, crush Walkers Shortbread until you have fine crumbs.  Combine melted butter with crumbs and press mixture into lined and greased muffin tins.  Bake crumb mixture for 6 minutes and allow cooling.
With an electric mixer, beat cream cheese just until fluffy.  Add in sugar and beat in until combined.  Add in egg, lemon juice, and vanilla, and combine.
Scoop a large dollop into each muffin tin space, so that it is 2/3 full.  Bake for 17 minutes.
Meanwhile, combine cranberries, water and sugar in small sauce pot, simmering until thickened (approximately 8 minutes).  Allow mixture to cool.
Allow cheesecakes to cool completely before finishing with cranberry topping. "
